Nicki Hamilton is an entrepreneur and founder of OneSeed - a new culinary destination located in the heart of Tribeca that’s serving a spin on feel-good favorites where veggies take center stage. Building off of her lifelong experiences of cooking at home with her Italian father, paired with her passion for using high quality ingredients to create familiar favorites from scratch, she opened her first restaurant concept in Dallas, Texas in 2015. Upon moving back to NYC and having a family of her own, she was inspired to launch a new dining concept in her local community that drew from her background and placed an emphasis on colorful and feel-good, flavorful dishes that would fuel guests through their busiest days. Having spent several years curating, testing and executing OneSeed’s menu, including making the most of opening delays as a result of the COVID-19 pandemic which allowed her to perfect her recipes, Nicki aims to ensure that all of OneSeed’s menu items remain fresh, seasonal, and fun.
She can often be found recipe testing in her own kitchen and experimenting with new, exciting flavors to further enlighten diners. In her free time, Nicki enjoys spending time with her daughter Harper, exploring new workouts, and - of course - cooking for her family.
